Recipe for Vegan PHO .

 Ingredients : Star Anise

                      Asian Black Cardamom

                      Fennel seeds

                      Coriander seeds

                      Whole nutmeg

                      Ginger 

                      Onion

                      Daikon Radish

                      Shitake Mushrooms

                      Dried Turnip

                      Zucchini

                      Fried Tofu

                     Mung bean sprouts

                     Wood ear fungus

                      Lemon juice

                      Black Vinegar

                      Red Vinegar

                      Vegetarian seasoning from the Vegetarian store

                      MSG

                      Salt

                      Whole white pepper seeds

                      Thai Basil

                      Prickly herb

                      Spring Onion

                      Thinly sliced fresh half an onion


Method : Put the fennel seeds , cardamom and coriander seeds in a pot of 250ml of water and boil .

In a separate and larger pot put water and all the other ingredients to boil , adding according to cooking time . Harder seeds and dried ingredients first then the fresher and softer ingredients later . Boil for about one hour . Then sieve the smaller pot of water in to the larger pot to combine the two broths .

Serve with PHO rice noodles and Thai basil , prickly herb , and fresh spring onion and thinly sliced onion . Squeeze some lemon into the soup if that is your taste , half way through eating .

Dip the tofu in Hoi Sin Sauce and Sriracha Chilli sauce .
